1. 研究目的与意义

Cultural translation is a kind of translation study created by Susan Bassnett. She mentioned the theory for the first time in her book, the anthology “Translation, History and Culture” published in 1990. She put forward the notion of “cultural turn” in translation studies, which set up a new school in the field of translation theory—the cultural school. Susan suggested that translation is no longer defined by the study of words and texts, it also included different culture information. Translation not only entails bilingual communication but also presents cross-cultural communication. This theory shows that translators must focus on different cultural perspectives to translate the raw material into target language.

A Bite of China is a self-made documentary on CCTV documentary channel which introduces various kinds of Chinese cuisines and presents their cooking process in details. The first season was released in 2012, and now it has gone through three seasons. A Bite of China arouse strong reflections among people and great reputation both in China and foreign countries since it’s on show. From the perspective of national culture, it depicts the gorgeous natural rivers and mountains of the motherland and Chinese delicacies, also presents the original flavor and beauty of Chinese cuisines from different provinces. This documentary not only integrates delicious Chinese food and gives the audience a marvelous visual feast, but also introduces Chinese culture to the world and strongly improves Chinese cultural self-confidence.

Culture-loaded words are important parts of cross-cultural translation. It refers to words, phrase or idioms used to express some unique to a culture. These words need to be properly translated and translators must give clear and detailed explanations to show the culture characteristics behind these words while doing cross-cultural communication. A Bite of China is a perfect opening-window to introduce Chinese culture and has a great number of culture-loaded words about various cuisines in its English subtitles. It has significant value to make a deep research about it.

2. 研究内容和预期目标

The paper focuses on the translation of culture-loaded words and its translating strategy from the English subtitles of A Bite of China. Through classifying culture-loaded words of A Bite if China, the paper analyzes translating strategy of different kinds of culture-loaded words from the perspective of Susan Bassnett’s cultural translation which aims to better understand of these words and promotes the 'Going global' strategy for Chinese culture development.

The essay is divided into four parts. Chapter one gives a simple introduction of the paper including research contents, research meaning and purpose. Chapter two is mainly about the literature review and current studies of culture-loaded words and cultural translation. Chapter three is the major part of the essay. It classifies culture-loaded words of A Bite of China and lists some typical samples to analyzes their translating strategy and skills. This chapter will be related to Susan Bassnett’s cultural translation theory. Chapter four makes a summary of the essay and presents its meaning for promoting Chinese culture.

3. 国内外研究现状

In recent years, great achievements have been made by scholars both at home and abroad in the studies of culture-loaded words.

In studies abroad, Wierzbicka(1997, p. 93) said, “A word is the best evidence of the reality of culture, in the sense of a historically transmitted system of conceptions and attitudes”. Mona Baker defined culture-loaded words as completely unknown concepts in the target language. Translating culture-loaded words likes transmitting some new idea or concepts into another culture, which can be specific or abstract, or related with different religions and living styles(Baker, 2001:21). Mary Snell-Hornby (2001) suggested that translation must take both languages and cultures in to consideration. And she called this phenomenon as “cultural turn”。Translation studies was combined with cultural studies. Meanwhile, biculturalism is an important part of translation strategy which introduced by Eugene A. Nida (2001:82). Nida holds the view that when translators try to translate some words or material with special cultural background successfully, sometimes biculturalism plays an more important role than bilingualism. Susan Bassnett(1990) believed that translation is no longer defined by the study of words and texts, it also included different culture information. Translation not only entails bilingual communication but also presents cross-cultural communication. It must consider the cultural equivalence seriously between the source text and the target text .

As for the related studies at home, culture-loaded words reflect a long history of a nation or a ethnic group which gradually accumulates in their special way of activity different from other culture. In addition, culture-loaded words can be defined in another way that it refer to the cultural information contained in the source language vocabulary which can’t find the corresponding word in the target language(Yu, 2018). Wang(王革, 2002) mentioned that language translation can not survive without culture background. Language especially culture-loaded word takes a deep root in culture and it can reflect the thought, feeling, belief and life style of a specific group of people. Wang(王恩科, 2002) pointed out that culture-loaded words is complex for it included connotative meaning and cultural meaning, so translators need to think critically and find the best balance between these two parts. Zheng(郑德虎, 2016) believes that translation is a bridge between two different cultures, and each side of cultures should be place on equal points of view. When translating culture-loaded words, translator must full consider about the target culture and translate these words as fluently as possible.
